Red Lasagna

Right after beschamel recipe that I've just posted today, I would like to share also Lucia's yummy lasagna recipe. 

Lasagna is a dish where your imagination can go wild. You can fill it as you wish... different cheeses, vegetables, fish, pesto... or simlpy whatever you have in the fridge.

I had mentioned before that Stefano's brother has a pasta fresca (fresh pasta) shop and also his parents worked there. 
In the shop they have two main types of lasagna. Red and White lasagna.

We name this one as Red Lasagna because of the red ragu sauce which is basically made of tomatoes and mince whereas white lasagna is made with mozzarella, beschamel, mushrooms, prosciutto cotto and parmesan. 
Of course pasta dough in the shop is a little different as they use semolina and machines are calibrated to that kind of flour.

Here is how it is made at home..


Ingredients:

Lucia's Ragu Sauce (previously prepared)
Bechamel (previously prepared)
Fresh egg pasta (prepared with 2 eggs and 200 g flour)
200 g mozzarella (diced)
100 g grated parmesan


Preparation:


  • Prepare a fresh egg pasta dough with 2 eggs and 200 g flour like in the basic recipe. Cover and let it rest for about 20 minutes.
  • Roll out and stretch it into a sheet with rolling pin as in the in the video.


  • Cut it into several strips as in the picture.


  • Bring water to boil. Add salt.
  • Boil 2 - 3 sheets at a time for about 3 minutes.

  • Drain and cool them immediately in cold water and then drain again.

  • Place pasta sheets over a clean cloth and wipe.

  • Do the same also with the remaining pasta sheets
  • Grease a 20 x 30 cm baking pan.

  • Bring all the ingredients onto the table.

  • Place a layer of sheet into baking pan.
  • Spread a few spoonfuls of the ragu sauce.

  • Spread a little diced mozzarella and then a few spoonfuls of bechamel.

  • Sprinkle with a little grated parmesan.

  • Continue with other layers. (Cut pasta sheets as you need, in order to have regular layers as in the pictures)

  • Continue this way with the other layers of lasagna / ragu sauce / mozzarella / bechamel / parmesan cheese.

  • Cook for 50 - 60 minutes at 190ºC.
  • Remove from the oven. Let it rest for a few minutes before you serve.

  •  Cut into 4 portions.

  • Serve into the plates.
