Pickled red cabbage mates very well with carrots in my opinion.
The sweetness of carrot balances the sour taste comes from vinegar.
Ingredients:
Carrots
Pickled Red Cabbage
Extra virgin olive oil
Sapa or balsamic vinegar
Salt

Ingredients:
- Wash and grate carrots.
- Add pickled red cabbage.
- Dress with oil.
- Add Sapa or Balsamic vinegar and salt as needed considering that pickled red cabbage has already absorbed some vinegar and salt.
