When its season arrives red cabbage is an indispensable element in our fridge.
I use it very often in our salads.
I prepare it in abundance. It stores well in the fridge.
Today I would like to share with you this very easy recipe.
Ingredients:
2 kg red cabbage*
100 g salt*
Fresh juice of 1 lemon
White wine vinegar
*You can use 1 kg of cabbage and 50 g of salt if you find 2 kg too much for your needs.
Preparation:
- Wash red cabbage, remove outside decayed leaves. Cut in half. Slice off the cabbage core. Cut into very thin slices.
- Wash and drain.
- Add lemon juice and salt. Rub it 3 - 4 minutes until the cabbage gets softened. Leave it rest for an hour or two.
- Wash and drain 2 - 3 times.
- Squezee the water away with your hands and fill into the jars by pressing well.
- Fill jars with vinegar to cover red cabbage. Store in the fridge
- Leave for 2 - 3 days before use.
